Fresh greens are perishable, so they must get to market quickly. When harvested in far-away places (often by low-wage workers), they're shipped by air, further contributing to the greenhouse gas overload. We source from American farmers whenever possible and we support their worker communities by paying a fair price. Plus, we don't maintain waste-generating inventory. We buy only what's needed to fill order requests.
